Yow, Mark, what kind of work does that entail? Are y'all preparing desserts for 500 or doing a hand-dipped operation or running big machines or what? My secret fantasy is to be able to produce small batches of liqueur-filled chocolates that even exist in the same universe as those 'ponst which I gnoshed in Warsaw and Krakow back in the mid-70's. (Summer college student. Have forgotten everything else I learned there -- well, not the phonetic lyrics to "Take Me Home, Country Roads" as performed by a wild-man house painter from Budapest -- but everything they tried to teach us at the university. My fault, not theirs. Twenty years later, still entranced with European chocolates and pastry and cooking, as they totally blew out the windows on my little Campbell's soup world!)
