I am currently enrolled in the California Culinary Academy, and I am seeking an externship/apprenticeship starting in February 1999. I have worked in the industry for three years and I am confident in my ability to excel in any kitchen. My background is in Italian cuisine but I am interested in all forms of cuisine. Location is not an issue, my desire is to study under chefs in different parts of the world over the next five or ten years.
