HACCP will be legislated soon in the hospitality business. It has gone from an inspection program to mandated law in the beef and seafood industries and now those same industries are crying that they are over regulated and more focus needs to be put on the restaurants. With HACCP wood becomes an outlaw no matter what very good qualities it posses. Take your pick, make your decision but the homogenization of restaurant food is on the way and HACCP for all it’s good intentions and numerous benefits will be one of the major battering rams in this process. Tang anybody?
