the very best way to handle mayonnaise is to cook the
yolks over a water bath. simply add all base ingredients
in a stainless-steel bowl. ingredients; yolks, vinegar,
netural mustard, salt, pepper and optional flavoring.
wisk this mixture, over a warm water bath, until
yolks seem viscous and cooked. remove from the water
and begin to establish an emulsion. slowly adding
oil and wisking. thinning with cool water as needed.

cooking the yolks is also a stabilizer. your mayo will
not break as easy.
try this method and see if it suits you.

: Forget Salmonella,also. Make your mayonnaise, make sure keep it refrigerated at all times since It has no preservatives. Make only what you are going to use. It doesn't take long time to make mayonnaise.
