: : I am a 1984 grad of the CIA with a great resume. I am the rule rather than the exception. Over the years I have seen chefs myself included treated like dirt (costly dirt). The minute the food cost is out of line or you need some time off better watch out! I taught culinary arts for four years and saw time and again students go out into the culinary world like the Christians in Rome, fed to the lions. Six months later, out looking for a new profession. The real shame are the owners who treat their people with such little reguard. This is one tough business. Not for the thin skinned. Me I'm learning computer code.... see ya

:
: 'm with you, I've been in the business for 20 years and thought that this was where I wanted my life to be. After so many years the money still isn't there, the bosses don't care, and you can't buy decent employees. It's time to take the hint and go back to school for a year to get a job where its realistic to have a life.

Hey,

Well if you cant stand the heat get out of the kitchen. I have been doing this as a way of life and love and some days cant stand the sight of the back door of the kitchen. But know that in the middle of Sat night I will get this sick little smile when the CRAP ( sorry I almost offended everone with a word, is this OK big brother) is hitting the fan and for some reason I love it, when the whole place is losing its mind and I can see the light of day inbetween the flying pasta and soring attutitdes.

Just two months ago I was giving away the milk for free for another owwner that seemed different than the rest but came out to be only interested in his own well being and not wanting to ommit to some one else having the knowledge to properly spend his bugeted money as if it were my own. Well the day I said enough for free was the last day we talked. Long and short of it I am still taking pride in what I did and want to see it through while making some cash out of the deal. Yea this was the laast straw in me working for some one else so it off to for a biz that will suite me and not just go after all tha money and power in the state and world.

Oh yea I still think this would be a great biz if it wasent for the Owners, Cooks, Chefs, Servers, Dish washers, Bussers, And yea the worst of all THE CUSTOMERS.

BUT IT IS IN ME AND i WONT BE HAPPY WITHOUT IT. Yea its a drug but its the only one left that I will take. No booze either. ITS ONLY WHAT YOU MAKE OF IT>
.

Biker Chef And a sick chef at that.
