What makes a great Chef? Absolute dedication to the ART. Dream about food. Wake up and try to create a recipie from your dream/nightmare.
Perseverence. Do you still exclude everything from your life except your menus? Even 20 years later? that is a good sign for a great Chef. Can you love your art more than your wife, family, physical health? You are getting closer. Can you live with half the salary that your peers make? You are getting closer still. Can you accept that even with all the talent you poccess personally, your work/art/creation/love will be excecuted by a staff that will not even understand why all the vegetables must be the same size? Finally, if you can accept that the sweat and agony you have put into your loving creations will be picked apart, never to be seen again in the space of 15 minutes, if that is acceptable to you, then yes, spend the rest of your life in the kitchen, and know that that is how a great chef lives.the pride, the heart, the passion for the medium is awesome, and not something to take lightly. Find this man, and learn all you can from him.
