"This consists of beaten eggs. Its purpose is to ensure the golden top of coloring of certain cakes, to which it is applied with a brush. In some cases, the eggs may be combined with a little water (for instance, when the oven's heat is too hot and cakes of a light color are required). In some cases, it consists entirely of egg yolks diluted with a few drops of water."
