It *might be a yolk wash, especially useful for puff dough, f'rinstance fish in puff dough.
The dough has no sugar and will dry the fish out by the time it turns golden so you brush with yolk wash before baking.
Could also be egg whites brushed on almond paste softened with whites and used to cover alkazar cake, decorate with pastry bag , brush with whites and blast in the oven, it does come out looking very gilded.
Brush with apricot glaze when cool.
