some changes are just bad shortcuts. Roux and bisque is one of them. The problem is that people are doing things and don't have the slightest. A fruit bisque is one of them. We used to call that coulis. Rice is still essential (even rice flour) for a bisque and it should be made from crustaceans. Otherwise call it something else.
And pastry cream made with cornstarch has different characteristics than one made with flour. The flour will make a pasty pastry cream and the cornstarch one will make a sliceable pastry cream for pie fillings. This is not the same.
And men and women have different characteristics too, like all individuals.
Another one mentioned all the drug use, foul language and deplorable working conditions, makes me kind of wonder where I have been all this time, not noticing it.
