When we do a Fish Grill, it's like this:

We use ONLY Mesquite split sticks... Charcoal ONLY to start Mesquite... Use a good LUMP, NOT Briquettes...

GOOD Custom Fish Baskets...

Marinade: Soy, Laxma Ginger, Laxma Garlic, Cane Juice, Green Onions, Lime, other stuff...

Finish Glaze: Fish Butter: Butter and Fish Stock...

DIP: For Mesquite Catfish??? WHY ??? If ya gotta do ANYTHING Smother it in a good Shrimp Etouffée, or Crawfish if it's in season... DON'T use that frozen Malaysian Rubber Stuff... Serve with Shrimp Rice...

If you GOTTA HAVE SOMETHING to dip it in, I have a Texas Remoulade that's TDF ...

On the Shrimp: All the same, but don't use a Basket... Hand-tong them or use skewers over a Parilla.. Serve the Texas Remoulade...
