: Where can I purchase a "savarin pan." They are sometimes called
: dimple pans. They must resemble cupcake pans except that they
: have a conical bottom that produces a dimple in the
: savarin for holding berries, whipped cream. etc.

Actually, a Savarin mold is sometimes called a turban mould. Several sizes are available in various materials, Plastic for moulding mousses etc. and metal for baking. They are also available as gang moulds ( I never know if it's mold or mould. One is a shape, the other one a micro organism) Spell checker doesn't help either, since both are valid spellings, just different meanings.
Check this link, I know that both J.B.Prince and Lamalle carry it. Ekco makes them teflon coated for homemaker use. Williams Sonoma should carry them too. You can also buy the savarins already made, basically a rich yeast dough (batter) that is dried and soaked in flavored syrup before service. Swiss Chalet carries them. I think they come 144 per case and are customarily included in the dead inventory of a lot of kitchens. Some of them might have been baked by the ancient Egyptians.
Sincerely,
HWK, CMC
