ISO: Advice on Frozen Custard

As a lover of frozen custard I am planning to open a shop
in southern California.

I am looking for advice from owners on such things as
who makes the best machines, what freezers work best,
recipies/mixes, general business advice, and anything
else that may be appropriate.
