whom ever told you 50 hours lied... Usually I work 30 hours weeks, have holidays, and weekends off... Hahaha... I tend to work seven dAYS a week...somehow usually over 100 hours per week... Accomplishments can't be measured in time... some people longer to get where they are going then others... This is a career where you have to love what you are doing... Money and short hours can't be the drawing point. I'm sure Gerard will tell you about his days at his pastry shop. Really it's a love hate kinda job. There are some days (like yesterday) that everything goes wrong, that despite the 18 hours I worked yesterday nothing got done. Then there are other days (and these occur far more often for me then others) where everything clicks... Customers are happy... waiters/waitress/ waitrons didn't forget anything... my cooks took their Escoffier pills and somehow were consistent... I would suggest you scout out a pastry shop or restaurant in the style you would like to work and ask if you could work for free for a period of time. Then try it, and see if you get bit by the bug...
