Cutting the potato on the corrugated blade of a mandoline into chiplike slices. Turning the potato 90º every second stroke.
This will give a lacelike pattern if the mandoline thickness is adjusted correctly.
Then just fry in hot oil at about 350 F. They can also be shaped into baskets and fried. It is not neccessary to preblanch them since they fry crispy at once.
I think they call them wafer potatoes in English
