The owner is correct. All product cost percentages are in direct relation to the sale that product generates, ie. bar cost is divided by bar sales, food cost divided by food sales and retail cost (shirts mugs etc) divided by retail sales. Remember revenue is pure dollars brought in. Inorder to be a sale, a product (tangible) must generate that sale.
