Theres all different types of chefs, bistro scale to institutional scale.
If I had to make fresh mayo for 1500 people I would use pasteurized yolks, the danger of too many untrained handlers down the line plus the time to seperate that many eggs being the resons.

Beef can be improved by switching their feed to hay a few days before slaughtering at the abatoire, maybe they should try the same thing with fowl before we all get silly cow disease.
