Food cost % is taken from food sales only. If you are in the 40% range then something is seriously wrong. Having an upscale establishment with check avg. over $50.00 per person should have you in the 27-29% range. Check your product pricing, thieft or what is going in the garbage. Where I come from you wouldn't last long without some justification.
