::My question/concern, as the client representative (contract manager) of our onsite food services account,
:centers around general and accounting expenses and the built in costs of management fees. To better:
:understand the two, I would like to know, from the food service industry standard, what exactly constitutes
:the G&A expenses (variable and fixed costs).

In my experience the G&A was the profit margin for the caterer, as a percentage of gross expenses, for the account.

The rate can range from as little as 2% for a very large account to as much as 10% for a very small account.
