Thoughtless employees

I have done restaurant consulting in a range of cities ,setting up everything from kitchen layout to menus to par levels, however I now find myself in L.A.
(lower alabama) and the work ethic is the worst yet I have standard side work lists for the FOH. they are aparently not detailed enough. This is my biggest
baby-sitting job yet any suggestions.
