You are not a chef , you are a sous chef.
Chef is not a name we call each other like "brother or sister", this is another big mistake the culinary schools are making.
I worked with culinary grad sous chefs 20 years ago who were doing this and its misleading.

They don't think less of you, they just don't fulfill your expectation of how you think you ought to be recieved.
Older chefs might not know as much but they are mature and have wisdom which lends stability.
cool your jets, you have a big advantage in your youth but allow another 10 years.
When I had as much experience as you I knew it all, 10 years later I realised I didn't and another 10 years later I realised I'd never know it all.
I never call myself chef, others do but I've been called worse.! haha
A tip for life...don't get bent out of shape about things that you cannot control.
