hehe, you =shouldn't= need 2 chefs but I don't think you'll ever find anyone capable.
It ought to be you, if you can't do it yourself I seriously would consider 2 options.
1. don't do it
2.outsource all desserts.

You can easily spend 6 months finding the right person only to see them jump ship 2 months later.
Quality will jump all over the place.
