Pat,

Don't even consider it until you know the biz inside and out, get a job in the same type store you'd like to emulate, williams sonoma whatever.
If you don't know the vendors you don't know the biz.
Go to a professional restaurant/bakery supply house and look at the quality of tools, then look at the overpriced trash sold in gourmet kitchen supply stores.
You can find everything in NYC, theres a couple of streets (canal?) which are full of what you need but do the homework before jumping in.
