When ever I have left a Restaurant or Hotel I have always bundled the Recipes together and given them to a responsible person, and said if they needed any help I'd be available, what they have done after that has been up to them, I never got any calls.
Information must be free.
Even now all the pertinent recipes are in a note book hanging for anyone and every one to use, but they are attributed when nessesary.
