There are several types of incentive plans that your can put your self up for, that will help make your employer (and you) happy.
The idea is to make your bonuses reflect improvement in the bottom line of the business. After a base line is determined (perhaps last seasons numbers) you could receive percentage bonuses for improvements in definable areas of performance.
Areas to include: Food Cost %, Labor Budget and of course increased net profits.
Your bonus would be a % (say 25%) of whatever improvements you make over the base line.
