You must be organized and efficient, Unload your basket and review your ingredients (have Pen and Paper handy) Plan your menu / work. " Then work your plan"
Your future employers will be judging you on your:
*Organization Skills, ( How you work with other people and on your own. )
*Sanitation and cleanlyness of your work ( always be neat and clean and Safe.)
*Efficient use of products ( no waste / try to use everything possible.)
*Cooking Technique, ( Proper cooking technique / Style and experience. )
*Creativity and Presentation, ( Go the extra mile & give it your best. )
Ask for anything else you might want or need durning your test.
