I can answer both, French cuisine is the best, American so called cuisine wildly unstable, some ideas are OK but with no foundation to build on its on shaky legs.
To find french cuisine you have to go there, it really can't be found in the restaurants in AMerica, I mean go anywhere in France and its everwhere to be found. A farmer gave me a slice of red raddish with butter on it, never thought of trying anything like that but the combination was perfect. Its just everywhere.
I think the average dope in France knows better than the average celebrity chef (gag) in America about what works and what doesn't fly.

One thing for sure , if chefs in the US follow the cue of foodie writers they are in deep crap.

I'm not French or American btw.
