Hi:
Remember it is easy to add salt but it is impossible to take it out.
Potatoes work only in light oversalting. Besides disposing it ( remember food cost ) Start the soup all over again, without seasonings. Take 1/8 of the salted soup and added to the new batch. If neede more seasoning you can add more of the soup, carefull, dont oversalted than the best is dispose it. The left over salted soup you can freeze it in small bags and take it out when you make the same soup again.
Chef Hans is right, kosher salt is the best to use because you have to use a lot to make it too salty. Many cooks don't like to use it because it doesn't flavor as the regular salt. I bought in my kitchen 1 case of kosher salt 3 years ago and have 4 boxes left. I am the only one that uses it.
