At NYIT we are putting together several On Line Campus courses in Hospitality, Culinary and Foodservice. The Foodservice Courses will be (still under development, big meeting tomorrow, 10/24) a certificate program with certificates in Foodservice Management and Catering Management.
Here is a link to the courses we were supposed to offer this fall(Culinary and Hospitality) but because of a lack of promotion none actually took place.

BTW the scope of courses that can be offered On Line is extremely limited because of the hands on nature of Culinary Arts.
