desire to be a Pastry Chef/need advice

Hello, my name is Tracey. I'm a 27yr old college
graduate with approx 8yrs experience in the restaurant
business(host,expo.,wait.,training director,& mgmt)and 1 yr.
as a cake decorator in a local grocery store bakery.
I've always had a love for baking and for the past two
years I've been making and selling desserts in my spare
time for my friends and family. I would like to attend
a Pastry school, preferably in Texas, and would
appreciate any advice. Some people believe I need a
specialized degree, while others believe I need work
experience in pastries only. Which is right? Everything
I know is self-taught from books and magazines. I want
to cultivate my skills so I can do this for a living
someday (within 3yrs).I know there's so much to learn
yet I'm determined to accomplish my goals. Please reply
with helpful advice on types of schools in the area
or possible job opportunities I should apply for.
