Hi Tracey,
There is no real right way, its whats right for your situation.
Can you afford school? is one question
also , what type of pastry chef do you aim to be.? Dessert maker? master pastry chef?
Fully qualified means a bit longer than 3 years, I trained for 7.
Making nice desserts in a restaurant can be accomplished in a shorter time but then I think you'll be looking at the next horizon.
Whatever you do, get some class time to learn food safety and some pertinent baking chemistry, that'll help speed things along.
REad through some of the previous posts, we've discussed this constantly for months.
Getting into the top kitchens will be single best thing you can do, if not able to get into the best kitchen in town do it the education route, then get into the better places because in the end its not which school but who trains you AFTER school is done.
The rest, as they say, is up to you.
