Store them in gallon containers, the batter that is. Rather than one large pail as it will gas off and you'll lose volume.
I used to make one large batter and divide into 7 containers, just one out every morning, mix and scoop.
By the 7th day the volume starts to suffer but you can sprinkle some BP on before folding the fruit in and that'll perk it back up again.
48 hrs is no problem if the cooler is cold enough.Store away from the door and keep them on the floor for the coolest spot.
No problem at all doing this.
