If you're on a budget why are you looking at Martha Stewart?
Find something less pretentious, more realistic for your financial situation.
Cookies are OK, you could make it easier on yourself thats for sure.
This page is for professional to professional but often times you can get someone interested in your plight if its of general interest.
On the pepper/cayenne cookies, too weird for me personally. I like normal stuff like scottish butter shortbread cookies.
On truffles, not unless you know how to temper chocolate, have the means to store them properly so they don't sweat, if you use compound coating (requires no tempering) they'll taste like wax.
Often I talk to people planning their own wedding, its easy to get in over your head.
