: I'm trying desparately to find a recipe for those little round thin mints used at weddings or baby showers. They are usually pink with a wintergreen flavor or white with a peppermint flavor. Sometimes they are molded into flowers or various other shapes. I know they use fondant. I found a dry fondant but I cannot find a recipe on how to make these mints with it. Any help would be greatly appreciated. Thanks!!

Laura,

reconstitute the dryfond with warm water, it takes very little water.
I put the dryfond in the mixer, start the paddle turning and slowly add water til it looks like thick oatmeal, the lumps and grain will mix out after 10 minutes.
Pour it into a saucepan and heat VERY SLOWLY, this is critical.
The temp you want is the same as baby's milk, test it with your tongue.
It must be constantly stirred or it will overheat and grain up.
The wafer mints are made with a dropper funnel, or just use a spoon and get odd shaped mints.
If it ends up too sticky when cooled the fondant was too cool, if it sets hard with white spots it was too hot.
A little practice is all it takes to become familiar.
Real (unconstituted) fondant seems to be less tricky to work with than dryfond but use whatcha got.
Decorate with tiny roses done in royal icing.
White, green and pink are common colors with peppermint and or wintergreen oil.
Drop em onto wax paper.

Cheers, Gerard.
