Puzzles me too, most people aren't aware a fluid oz is a volumetric measurement...not a weight , probably the people writing the recipe too.
Also oil and water being different specific gravity weigh differently if you scale them instead of measuring by volume.
You can get away with weighing liquids if you know what textures you're looking for in the finished mix, othertimes it could throw you off in a critical formula.
Matt the bread baker says most bakers learn by mistakes, its true, you have to develop how to recognise desired results and make adjustments when needed. Its impossible to describe feel.!
