puff pastry shortening

What IS puff pastry shortening? Can it be used at home? Does it make puff pastry easier to make? Puffier? ?????
Also, the bakeries around here have started using fake butter flavor in their pastries. It is so awful that I could cry. What is this crap, and why would ALL the bakeries do this at once? I hope this isn't some new fusion of pastry and vomit. (Obviously there aren't any great non-chain type bakeries here. That gives me an idea....)

Has anybody tasted or made a cheesecake that is tall, and so heavy it takes 2 people to eat a sliver of it? If anyone has a recipe, I would be so grateful for it.
