: I am a recent graduate from a culinary insitute and have a job as a pastry/baker. I need help with doing 150 wavy sugar sticks; what can I use to pipe the hot sugar with that will not burn my hands or ruin a cloth pastry bag? Paper doesn't seem safe if it might break. Reference: Inferno of Chocolate Mousse-Duquesne Club. Thanks Von

I've done this dozens of times. Use large double paper cones and wear cloth work gloves or use a towel. 150 isn't really that much, you won't need a whole lot of sugar. It won't take that long to do and you'll be surprised how easy it is once you get the hang of it. If you start doing this on a daily basis just use isomalt and keep it in the same pot and reheat whanever you need to use it.

Good luck,

Pierre
