I don't know what apple flan is, I know tarte aux pommes.
Done with apple compote or Parisien with pastry cream.
You might call it flan but its much better if the custard is broken down which wouldn't be a flan.
I don't see apples ,baked on top of flan as being viable.
I bake bread for a Spanish restaurant, the chef makes a custard with yolks and cream, looks a bit like too rich creme anglais.
I prefer to stick with French nomenclature, its more orderly and logical.
Mixing and matching metaphors is like talking about baguettes, batards, petits pain and tacos...it doesn't help us understand.
Is apple flan English or American crackpot vernacular?, ya know...everything works ..just mix it all together.
15 yrs ago I called it existential cuisine, now its fusion.
Anyway, why aren't you working?
