I'm going nuts here. For my laminated doughs class, I need find out what chausson is (the chef gave the class a worksheet of puff pastry terms to define). Can't find it in Larousse's Gastronomique or my Professional Pastry Chef books.
Also having difficulty finding out what "pastry shop croissant" is. Anyone out there that knows???? I'd appreciate any help I could get. Thanks!
