There is always been a gulf between the dilettante and the dedicated specialist . The passionate amateur that cares not for time or cost and the professional artist subject to a dead line and the need to make a profit. How many time have I faced those true believers and been subjected to their criticism because they once read that such and such is this and of course "they Cook". Yet, who am I to judge because I prey on that very prejudice and inflate their ego even more by telling them how smart they are because they pick me to prepare their wedding, reunion or what ever.
No really I’m just kidding.
