Great question Rick. I appreciate your willingness to operate legally. Illegal caterers potentially hurt the image of our industry.
First, the kitchens you rent must comply with local health department codes.
Secondly, YOU must comply with local health department practices of food protection and sanitation. (Get certified, contact your state restaurant association for future seminars)
Thirdly, you will need a local business license and a state sales tax identification.
Forthly, you will need general liability insurance and property to protect your stuff.
That is just about it.
