: I have used wraps many times for large functions. Use large hyroller flat bread, available from most suppliers. Wet them down and blot with paper towels. Use a good spread for the "glue" like a whipped herbed cream cheese, hummus, or refried beans and add complimentary veggies, meats etc. Roll tightly and wrap in film the night before. Slice for trays just before serving. I use lots of colorful fillings. The filling must be as dry as possible. Good combinations are refried beans, shredded cheese, cilantro, tomato, lettuce, green onion. You are only limited by your imagination.
