The main thing is how are you paid ?
If you bill the client directly then I would get a Licences. This should be easy since you are working in a commercial kitchen. I would also get liability insurance to match my assets
This sounds like it could be a good situation IF you get clarification on all aspects. When I was in school we visited a bar where the owner could not make a go with the food. He subbed his Kitchen out and seams to work well for the cook and the owner. BUT they had lawyer do the contract.
