Finger sandwiches (I have some great recipes, including an asparagus rolled in bread and tied with tiny satin ribbons), sweet and savory sandwiches, maybe some savory tarts, scones, small sweets and of course tea. We are looking forward to this part of the business. I love thinking of the cozies we can make to cover the tea pots and picking up odd pieces of china at antique markets. Also we would serve these items on the tiered serving pieces. Most of the places around here and the ones I have researched on internet offer high teas in the afternoons by reservation only. This way we can do our regular lunch crowd from 11:- 2:30 and the place would be available for high teas for the rest of the afternoon. We would not be open for dinner. Also thinking of not being open on Sat and Sunday and leaving those days for the place to be booked for private functions such as wedding/baby showers, rehearsal dinners etc. This would definitely be a place ladies (rather than men, of course they are welcomed) would go. Also doing a high tea birthday parties for little girls would be an idea. Saturdays and Sundays would be perfect for that. High teas seem to range from $10 pp to $15. All the things we would serve at a high tea are right up my alley as favorite things to make.
Do you have an Eat-Z's in your area? Gourmet grocery. I had my first trip the other day in Houston. Mind bloddling experience. They have homemade breads, foods to be taken out, a salad bar that has all the lettuces displayed in bins on the wall. A take out sandwich area with things I've never seen on a sandwich, gourmet vinegars and oils. It is wonderful. Can't wait to go back again. Not sure if it is a franchise or not.
I'm sorry I come off as inexperienced, I seem to always get the cart before the horse in explaining things. Sometimes I think I have the energy of about 10 people.
I am checking into the classes. If I have to I will go beg to work in a kitchen for free on weekends I'm not busy. Probably won't have any takers though.
