I feel that "per person" pricing for groups less than 35 is often perceived as a poor value. The average peson's experience in value perception tends to be based on restaurant pricing. "I can go out to the best restaurant in town for that much money!"
I have found that a flat dollar quote such as $150 - $200 inclusive" tends to have less "sticker shock" than " $30 - $40 per person" and will quickly separate the men from the boys (no gender inferrence intended, esp. since 90% of catering buyers are female)
Exposure is very important, but you must be exposed to the right buyers! Don't get the reputation of providing $20 catering for $10!
