As a rule I only approach concession sales as a marketing program, it has been my experience that we do not make any money doing concessions so we look at the exposure and PR we can get from that type of event.
Here are a couple of things that I have learned along the way from those that actually make money from concessions.
1. Lines are good but not too long and keep them moving.
2. Charge more for your beverages (are you the only non-alcoholic beverage supply at the event?).
3. Make sure your fryer can keep up with the demand.
4. Know how you are going to handle the cash and have a security plan.
