hi all im currently working as kitchen chef in the heart

good qualityfresh fish is hard to find;recently i found
a supplier who
can give me frozen shark steaks the quality is quite
good but when i cooked one the flesh was bitter
is this usual or is there a marinade or preparation
i should do first?
