Premise being, you spend time convincing customers why they should pay 1.19 for your great cookie and you lose a 6000.00 wedding while you are tied up with the idiot....
Think this through... you have to be excellent to survive the long term... I assume you have a nice catering base now... It takes time and / or money to develop a great catering business...
I too would like to know what you mean by 35% of your revenue... where does the other 65% come from, catering???
