Cooling down is the tricky part. If you don't have commercial refrigeration I would not recommend it. Lay the chicken on a sheet pan in a single layer with plenty of space between the pieces so the cold air can circulate.

At the function place the chicken on the B-B-Q to grill and reheat again to an internal temp of 165. Only in the last 5 minutes should you brush with sauce.. If you do it earlier the sugar will burn.
