Hi, I'm a newbie and I'll appreciate it very much if you can help me out. I'll be serving bbq chicken for 150 and the client wants it chargrilled on the spot. Questions:
1. Can I pre-cook it in the oven (I suppose it should be completely cooked)in the bbq sauce then take it to the site and chargrill it?
2.Will it still have the flavor of chargrilled chicken even if I just grill it to put the marks?
3. It will be great if I can oven-bake it the day before but how do I let it cool quickly?
4. Lastly, will there be a risk of drying it out?
