Can't tell you how many times I have fantasized about going back to being 15 with the knowledge I have now, but we won't really go there... but seriously, here is what I would do if I could go back (professionally that is)
I would continue to work in foodservice until I had the opportunity to go to culinary school... I would go... I would go for probably two years then off to college for the same business degree I got....
I would then go to work for a top notch caterer and learn all I could about the business... I might even stay with the catering company for ever if they help me realize my passion and financial goals, if not, I would start my own company and probably be more successful than I am now...
That's what I would suggest... dare to dream!!!
